Rice with Semi-Dried Tomatoes, Olives, Pine nuts and a hint of Lemon

Ingredients:

2 cups (cooked) SunRice Brown Medium Rice
2 Tbsp olive oil
1 cup semi dried tomatoes
1 cup black olives
¼ cup pine nuts
1 lemon zest and juice
Salt & pepper to taste

Method:

  1. Heat olive oil in a fry pan on low heat.
  2. Add olives, semi dried tomatoes and lemon zest and cook gently for 2 minutes.
  3. Pour in the lemon juice, cook for a further 2 minutes then add rice and pine nuts
  4. Check seasoning and serve.

Cook’s Tip: Serve as a vegetarian meal or as side dish with grilled fish.
