Fruit Tabouli

Serves: 4

Cooking Time: 5 min

 

Ingredients:

3/4 cup (90g) cracked wheat (burghul)
1 cup unsweetened apple juice
1 tablespoon grated ginger
200g strawberries, diced
150g blueberries
1 mango, diced
2 white peaches, diced
1 cup mint leaves, roughly chopped
Low fat yoghurt, to serve

Method:

  1. Put the cracked wheat into a bowl.
  2. Put the apple juice and ginger into a pan and bring to boil.
  3. Pour the apple juice over the cracked wheat and allow to stand for 20 minutes or until all the liquid has been absorbed. Transfer to a sieve and press out any excess moisture.
  4. Transfer the wheat to a bowl and gently fold through the fruit and mint. Serve with low fat yoghurt.
